The White Wine choices include a Sauvignon Blanc from Chile, an Australian Chardonnay and a fruity Trebbiano from Italy. The Reds are a medium-bodied Shiraz from Australia, a Merlot from Chile and a classic Italian Mulitpulciano.

Starters include Bill Casey's Shanagarry Smoked Organic Irish Salmon; Sally Barnes Smoked Pollock or Haddock in Chef's Risotto with a Free-Range Egg from The Bergins in Co Laois; Black Puddings alternatively from - Jack McCarthy - Kanturk (North Cork), Nora Egan Inch House (Co Tipperary) and Sean Kelly (Newport Co Mayo); Carpaccio of Ruby Beetroot with Ardsallagh Goats Cheese and Galtee View Honey; Cashel Blue and Poached Pear Salad with Candied Walnuts; Tomato & Chick Peas with West Cork Gubbeen Farmhouse Chorizo and of course Toonsbridge Buffalo Mozzarella Cheese - at this time of the year they will match it with Slices of Warm Aubergine grilled in their Charcoal Oven and some very Good Extra Virgin Olive Oil. Finally the O'Connell's signature dish - Charcoal Oven Roast Free-Range Irish Chicken from Co Carlow or Co Limerick - the chicken is carved at your table from the silver domed Carving Trolley.
