IlPrimo has designed a menu again, especially for Rewarding Times subscribers to reflect their continued passion for Italian Rustic Food.
Their menu makes use of the finest home grown and locally sourced 100% Irish meats and poultry, fully traceable, and both locally and nationally sourced fish.
In compiling this menu, head chef /owner Anita Thoma, has designed a varied option list, which showcases the best of home-made pastas and risottos married with the freshest of ingredients to delight the taste-buds!
Anita has sourced the finest first pressed olive oils from the Doc region, San Marzano tomatoes, ripened in the Italian sunshine, and prosciutto di Parma and Parmigiano Reggiano, which are also indigenous to the Doc region.
All pastas are hand- made daily in the restaurant.
To accompany Rewarding Times diners experience, Il Primo has selected a White “Torre del Falasco Garganega 2012”. The wine is sourced from the north-east of Verona in a valley referred to as “Valley of the Gods” to the ancient Greeks. This wine is made from fully ripened 100% Garganega grapes picked slightly later than average. 50% matured in oak barrels. It has a pale lemon colour with a citrus fruit perfume and a lemon zest finish. Perfect accompaniment to some of the delicate dishes on offer!
For the red, Il Primo have chosen a “Torre del Falasco Corvina 2011”, from the Valpolicella region. This wine is made with 100% Corvina grape and is un-oaked to retain its fresh, youthful characteristics. It has a distinctive cherry fruit on the palate and is given an approachable depth thanks to a partial dyeing process.
